The common mistake is assuming a buffet needs fewer staff because guests serve themselves. The food line is the easy part. What decides whether a room feels tended is bussing and clearing, and that runs about one server per 25 guests. At 200 you also want two buffet lines rather than one, or your last guest eats forty minutes after your first.

Plated service needs roughly a third more servers than buffet. Tell us the service style and we will size it exactly.
Event servers and crew bill $55 per hour in Raleigh, NC, bartenders $75 and a banquet captain $105. What varies is the shape of the team and how much lead time we have. That covers servers, bartenders, barbacks, runners, bussers and setup crews.

It is a timing problem, and timing is a staffing question. Here is what we plan for at a Raleigh wedding, in the order it tends to happen.
This is the one nobody plans for. The timeline says the reception ends at ten. At ten the dance floor is full, the bar is busy, and nobody is leaving. Every hour past the contract is a decision someone has to make at eleven at night, usually the couple, usually badly. We plan the tail end before the day: what an extension costs, who authorises it, and which of our team stay. It is agreed in writing beforehand so nobody is negotiating during your last dance.
Plus-ones show up. Vendors eat. The count you gave the caterer in June is not the count in the room in July. Staffing built to the guarantee is staffing built to a number that is almost always low. We build to the guarantee and hold a bench, so ten extra guests is a phone call and not a shortage on the floor.
A modern reception is not one dinner service. People graze, come back, come back again, and the kitchen closes long before the appetite does. A team scheduled for one clean dinner push is standing down exactly when the second wave starts. We staff the shape of the night, not the shape of the timeline.
Ceremony space becomes reception space in twenty minutes while your guests hold drinks somewhere else. It is won or lost on how many hands were scheduled for that exact window, not for the whole night, and on somebody owning the clock. Our captain assigns the flip by zone before anyone arrives.
Your planner runs your wedding. Someone still has to run the people carrying plates. Without that, every question routes to your planner, and your planner is with you. A captain comes with every deployment and reports to your coordinator. That is the role most staffing companies do not send.
Event staffing has a chronic reliability problem, and most firms manage it by asking you to over-schedule. We do not. Backfill is our problem, not a line on your invoice. The number on the quote is the number on the floor.
Multi-million dollar general and liquor liability, with an additional-insured certificate issued in 24 hours or less. Most venues need 21 to 30 days notice from a vendor. If your venue needs paperwork, it is not going to be us holding up your file.
South Carolina has required alcohol server certification since January 2026, enforced since March, with certificates producible to the state on request. Ours are current in every state we operate in.
